harvest salad recipe
the perfect thanksgiving side salad!! packed with nutrients and fiber, this tasty salad is a must-bring to your holiday dinners! 🥬🍠🦃 🧡

ingredients
- one bag of chopped kale
- large sweet potato (about 2 cups cut)
- one can chickpeas
- 1/4 cup chopped almonds
- 1 large avocado
- sesame seeds
dressing:
- 1/3 cup plain greek yogurt
- 1/4 cup maple syrup
- 3 tbsp dijon mustard
- 2 tbsp olive oil (i love @getgraza drizzle oil in this!)
- garlic and onion powder, salt, and pepper
steps:
1. massage kale with lemon juice and olive oil until broken down slightly
2. airfry sweet potato at 400f for 20 minutes or until brown
3. combine rinsed and dried chickpeas with a tablespoon of maple syrup and olive oil and airfry at 400f until crispy
4. cut avocado into small cubes and add to salad with almonds, roasted sweet potatoes, and chickpeas
5. blend greek yogurt, maple syrup, olive oil, mustard, and spices until creamy and combined
6. add dressing to salad and coat fully
7. add to serving bowl, top with sesame seeds, and enjoy!!
