chickpea salad
this salad is a great way to pack in nutrients and fiber in a simple and flavorful way!
ingredients:
-1 can chickpeas (rinsed and drained)
-1/3 cup diced red onion
-2 cups cauliflower
-5 mini Persian cucumbers chopped into cubes
-1 medium avocado cut into cubes
-1/4 cup crumbled feta
-1 tbsp. fresh chopped dill
-1 tbsp. extra virgin olive oil
-2 tbsp. lemon juice
-1 tsp. maple syrup
-1 tsp. apple cider vinegar
-salt and pepper (measure with your ❤️)
1. toss cauliflower with olive oil, salt, and pepper and roast until soft and cooked
1. add rinsed chickpeas, red onion, cucumbers, bell pepper, cauliflower and dill to a bowl and mix
2. add olive oil, lemon juice, maple syrup, and apple cider vinegar and combine to coat the entire mixture
3. add salt and pepper and adjust to your liking!
4. enjoy right away or let it marinate to bring out more flavor😊
